December's Recipe: Zucchini and feta slice
5 eggs
1 cup self-raising flour
1 teaspoon salt and grinds of black pepper
5 medium zucchini, grated
2 spring onions, sliced
4 rasher bacon, diced
150g feta cheese, crumbled
1/4 cup oil
Preheat oven to 180
Grease a 20cm by 30cm baking dish
Whisk eggs
Add flour, salt and pepper and whisk til smooth
Place grated zucchini in a clean cloth and squeeze over the sink to remove excess liquid
Add zucchini, spring onion, bacon, cheese and oil to egg mixture
Stir until evenly combined
Pour into prepared dish and bake for 40 minutes or until golden. Stand for at least 10 minutes before slicing
This is just as yummy hot for dinner or cold the next day for lunch. I've made it without the bacon (and added some mint and a little bit of chedder cheese on top) when we've had a vegetarian friend come for dinner. It is now a regular on our menu.
